A 48-hour fermentation, a deep rinse and a long dry time create a unique process from a very eco-focused producer. The result is an incredibly distinctive coffee: surprisingly sweet and full of flowers and fruit, with enough complexity to make it great at any time of day.

The process

First, the cherries go through a period of controlled oxygen exposure. They are then depulped and fermented for 48 hours to develop flavour. After a thorough rinse, the beans are sun-dried on raised beds.

The producers

Daniel, a coffee farmer from Antioquia, was raised in his family’s three-generation coffee-growing legacy. His ambition is to craft exceptional speciality coffees and to make his farm a model of sustainability through eco-friendly practices.

Santiago is deeply rooted in tradition. Guided by his father’s teachings and working alongside his family, he has been producing exceptional coffees since 2012. The Caturra Chiroso variety, which occurs naturally on his farm, stands out for its lanceolate leaves with distinctive “frizzy” edges, and for a cup full of floral notes and yellow fruit.
