From Gaitania, considered by many to be the birthplace of Colombian coffee. An extended drying process gives these beans a very consistent flavour profile. It’s a vibrant roast, with hints of almond and caramel giving a luxurious top end to a very indulgent cup.

The process

The coffee rests in its mucilage for 24 hours, then dries on a patio for 15 to 25 days. It is stabilised before milling, which results in a consistent, harmonious profile.

The producers

Gaitania, in Tolima, is an area historically affected by conflict and renowned as the birthplace of Colombian coffee. In 2016 local grower Emmanuel and his family established a coffee processing centre to help growers from more than 15 villages in Gaitania process their beans.

In 2019 Forest Coffee and Emmanuel joined forces to set up the Black Condor Project, supporting farmers in Gaitania affected by guerrilla warfare. Forest Coffee runs regular workshops with the producers on quality, fermentation, drying and cupping their own coffees. The result is the exceptional Black Condor coffee.
